Sorry to say, but this site has been so depressing for a few days. I thought I'd ask an average, everyday question....to make us all feel a little more normal today.
I made Eggplant Lasagna, and my BIL and SIL are coming for dinner. They leave for Cali tomorrow to see their beautiful grand daughter.
Sorry, sometimes we just need some REGULAR conversation.......or at least THIS caregiver does.

Pan fried salmon for supper and my annual overdose of ice cream. I won’t buy any more till next year now.

It is way too hot to go out shopping.
Hamburger for supper tonight. Well, actually half a cooked beef patty in a folded slice of bread with mustard, I didn't have a bun. I'll have the other half later with a small green salad. 🥗
As hot as it is,we certainly don't want any soup.
a popcicle sounds alot better.
There's lots of recipes online for cacciatore and you can add all sorts of other veggies into it. I like to put lots of mushrooms in mine, just a personal preference.

Ideally, I could cook a batch of ground beef and freeze it.
But not tonight.
After I have some Honey Greek Yogurt, I can go back to sleep maybe.
My grandmother used to do night-time cooking when the weather was hot. She'd make a whole bunch of spaghetti at night when it cooled off a bit then have it hanging across a rope in the kitchen to dry. She used to make homemade marinara at night too when it was hot. Since it was meatless it could be left to cool on the stove then she'd put it into jars for the fridge. In later years gallon-size plastic food storage bags and into the freezer.
Late at night, with no one having had dinner....it was 10:00 p.m.,
there comes a reluctant cooperation to work together, chopping, chopping,
chopping celery, carrots, onions.
Dumping in bouillon, (better than Bouillon), precooked chicken, more water.
Spices.
Noodles.
Very good home made chicken noodle soup with leftovers.
Sounds crazy, this late night cooking, but we are just managing a full moon and the obligations that come along with bill paying the first of every month.
And, we made it!
Happy 4th of July Independence Day in the U.S.A. 250 Years. It is a holiday weekend coming up.
Eat more soup-too hot for oven cooking here Golden. Though, I wish my oven worked. We use a turkey roaster pan for an oven, and have a toaster/oven.
Things do taste better from an oven, even roasted veges on a cookie sheet.
Dh would love some of that!
Sending out for vegetables via Instacart delivery! It is so worth the tip they so richly deserve working in this heat. Not a luxury for us, it saves hiring in home help or drivers when I feel I shouldn't drive. Not driving because of the aggressive, hateful, mean drivers out there. It will all work out, everything being temporary as it is.
AI could not figure in the interference from a finicky eater, unwilling to eat on a regular schedule.
He is back to skipping meals.
He insists he won't eat the steak, but once it is plated, he wants some.
Delays eating it.
So, I just leave it on the counter, put a lid on it.
While I am eating mine, I am grousing that here I am, eating alone again.

I shop online, so have a record of what I bought before and can pretty well make my choices from those lists. It does make life easier.
The list has suggestions on how to use those groceries for specific meals, and has counted how many eggs I need for the week. Things I buy regularly, but now mapped out in a PLAN, called 5 4 3 2 1. (Except Ai tailored it to our needs.)
AI has suggested ways to combine a carnivore diet with a vegetarian diet, so we both get fed without the fuss of making two separate meals.

We plan to actually GO to the store tomorrow.
Can't wait. Get it all at once, earlier in the morning because of the extreme heat.

These days, we have switched the sour cream to Greek Yogurt.
Finding the right steak is a challenge, even when shared.
Dh is happy with a huge salad, minus the steak.
I am happy with the steak only.
I like oven dinners. Just pop it in the oven, go do something else, and an hour or so later, you have dinner. No standing over the stove and fussing over food, like I used to when I was younger and enjoyed it.
I frequently make casseroles or baked chicken breast with whatever vegetables I have on hand. Put it all in one baking dish.
That makes sense . I’m alittle more than an hour north of Philadelphia . The humidity is what the problem is I assume . It seems more humid here than where I grew up on eastern Long Island . It seems the things kept in the kitchen bread drawer went stale .
I do have a small pantry closet off the kitchen in a small dark hallway , that leads to the laundry room . We will see I guess what happens to the dry pasta and cereal in there . 🤷♀️
10 more days to new A/C and furnace units . The contractors are very busy . The heatwave is triggering a lot of old A/C units to need replacing .
Been making a lot of cold salads for now in this heat .
